Mike Kowdley's Eggplant
Small pile of thin eggplant cut into planks
7 tbs olive oil
1 roma tomato (minced)
3 tbs Balsalmic vinegar
1 tsp chopped green onion
1 tsp chopped garlic
1 tsp fresh basil leaves chopped
Salt and pepper to taste
Brush on, bbq, and brush again
